Why do some characters produce more than eight digits?

UTF-8 is variable width. A–Z take one byte, most accented, Greek and Cyrillic letters take two, most CJK characters three, and emoji four.

Is there a standard way to separate the groups?

No formal standard — spaces between bytes are the usual convention for readability. Machines do not need any separator.

Can I convert the result back?

Yes, with the binary-to-text tool. The round trip is lossless as long as the grouping is preserved.
